The center ridge provides support such that the working edge at the middle of the anvil is supported as if it were the center of the anvil.

Back side or Church Window Anvil
The flat back on this anvil will allow it to be used on its side on the stand to take advantage of the curves and nearly hemispherical shapes of the "church windows". Ocassionaly these anvils show wear on the bottom due to use upside down.
